This user recipe comes from Sister Alison in White Plains, NY who has invented an amazing spicy polenta. Although she didn’t know it when she made the recipe, polenta is a common African food, called Sadza in Zimbabwe, sima in Malawi, and mieelie pap in South Africa. This just goes to show that all the wide world over, great chefs think alike!
- 6 cups water
- 1 3/4 cups yellow corn meal
- 1/2 teaspoon Brother Bru Bru’s African Hot Pepper Sauce
- 3 tablespoons unsalted butter
Bring the water to a boil in a heavy large saucepan. Stir in the cornmeal gradually, using a wire whisk. Add 1/2 teaspoon Brother Bru Bru’s African Hot Pepper Sauce. Reduce the heat to low and simmer until the mixture thickens and the cornmeal is cooked, stirring often, about 15 minutes. Turn off the heat. Add the butter, and stir until melted.
